Therefore, I think this beer would also benefit from cellaring, if you can bear to keep it in your cellar for that long. 3-5 years is the optimum time. This allows the flavors of the smoke to mellow a bit so that there is less bitterness. The chocolate flavors become a bit more prominent and the smoke becomes that of a softly smoked cheese and less that of a smoked fish.
